We’re accustomed to being welcomed by a friendly face at Bone Fish Bar and Grill. In fact, at any one of Livio Ferigo’s West End restaurants we’re greeted by his broad smile as he makes the time to hop between each one. Imagine our delight to see not one but two familiar faces. Popular Italian Chef Fillippo Vianello has been cooking in Bermuda for over 10 years and made the move to Bonefish at the start of this year. The change has given him renewed energy to improve the menu at this popular Dockyard spot, infusing his signature Italian style while elevating the already beloved items. There’s a smoker on site that is used for their delectable St. Louis pork ribs and brisket and a massive terrace to support the lively crowds of day-trippers and revellers after dinner.

The gnocchi, inspired by a favourite dish his grandmother would prepare at home, is made by hand. “It would melt in your mouth,” he remembers affectionately. His version, he explains, is somewhere in between what she would make and the more al dente version typically found in restaurants. He incorporates an intimate knowledge of the customer with his love of traditional Italian cuisine and this dish with its creamy saffron sauce is only one example. The seafood salad is zesty and fresh and there because “it’s what I look for whenever I eat out,” Chef Fillippo reveals. “I like to include dishes that I like to eat personally.” And with prime position dockside, why not take advantage of all the ocean has to offer? The carpaccio is a constant, made with whatever local catch is available that day. We’re lucky. Today’s swordfish is a great example of what you can expect, the buttery flavor of the fish a beautiful candidate for the saline capers, peppery arugula and lemony marinade.

Unlike many, he’s happy to divulge the secrets in his family recipes. His Panna Cotta, a barely set custard, flecked with real vanilla is heavenly creamy, with just a splash of Gosling’s Black Seal thrown in for good measure.
